A 24-year-old Turkish national on a student visa was one of five people who were allegedly attacked in a three-hour period.
Without warning, he was stabbed in the leg from behind on King Street in Melbourne CBD about 10pm.
His cries echoed down the busy street and caught the attention of Chad Van Der Lee, who was out celebrating his partner's birthday.
"At the start, I was like, 'What have you done to yourself?' Then I looked down and seen the blood and I was like, 'Oh shit'," Van Der Lee told 9News.
The young father ripped off his shirt and used it as a tourniquet to stop the bleeding.
"I literally got that off Law and Order," he said.
"My missus always watches it and I've seen a couple of shows and they just say cut the pressure from the top.
"I almost started tearing up because when he went limp, if you've held someone who's gone limp, a dead weight's not a good sign."
The victim has since been released from hospital.
When praised for his actions, Van Der Lee said he "was just doing what any human would do".
A 31-year-old woman and her partner, who were also allegedly attacked by the same man on Saturday night in St Kilda East, are now in stable conditions, as are a 28-year-old man attacked in Southbank and a 31-year-old English tourist stabbed in St Kilda.
Police allege they were all stabbed by 31-year-old Christopher Raftopoulos.
